Preparazione:
Battete leggermente le fette di lonza facendo attenzione a non romperle e copritele con una fetta di pancette.
In una ciotola amalgamate il pancarrè (precedentemente ammollato con il marsala sbriciolato) insieme ai capperi, i pinoli, l’uvetta, il pecorino e l’uovo intero.Lavorate bene il composto e regolate di sale e di pepe.
Suddividete il ripieno sulle fettine di lonza e arrotolatele fermandole a due a due con degli stecchini di legno.
Rosolate gli spiedini in un tegame con un filo d’olio, unite il pomodoro, le erbe aromatiche and chilli.
